This looks delicious! SO easy and nutritious too I'm gonna add this to some of my breakfast meals! Thanks so much Ai 🙂. Homemade granola is always the healthiest and I love this recipe. It's different from others I have used before and has more fibre and different ingredients added.

I am definitely going to try this! By the way, your smile on your page gets me anytime i visit your blog! It is infectious and makes me just want to keep on reading!

Fantastic granola with a great choice of extras! Followed you on pinterest! Have a good weekend:. Good recipe!

This is a great recipe, a new staple!!! Awesome stuff! Thank you for the recipe. I'm with your mom on preferring not to have dried fruit in my granola. The dried fruit gets too chewy when baked with everything else.

Loved your tip about preparing the coconut, too. Hi Beth 🙂 Yes, the dried fruit gets hard and chewy and unpleasant when baked, which is why I always add it at the end after it comes out of the oven.

Definitely trying this. Can I sub in half steel cut oats and half old fashioned oats? I have all these steel cut oats and I'm not to sure what to do with them. I honestly can't say, as I've never tried making granola with steel cut oats Let me know if you try it out!!

Thank you for this great recipe! I have been making this regularly for my family and they love it! Highly recommend it. Thank you so much Jackie! So glad you and your family are enjoying my granola recipe!!

I use olive oil in it all the time too 😉 Such a good swap! How many servings would this yield? Adding up all the calories makes me nervous! Trying to eat healthier than before after babe 2 🙂. It's difficult to say, as one serving is different for everyone. That said, my husband and I will usually finish the batch in about 3 days if we have it for breakfast every day.

If you want to cut calories, you could try doing half granola and half muesli, as muesli doesn't have any sweeteners. Something my husband does as well is serve it with yogurt instead of milk so it's more filling!

I searched many grocery stores for a cereal that was both sugar-free and gluten-free to know avail. I am so excited about your recipe.

I substituted the maple syrup with a sugar-free maple syrup. And it is perfectly delicious and perfectly satisfying. I will never eat store boughr cereal again. Hi Cece! I'm SO happy you loved my granola recipe! Thank you so much for leaving such a lovely comment and rating!!

Hi Lamisah! I also think that how you serve it will change how much you'd want in a sitting. If you're serving it sprinkled on yogurt or a smoothie bowl, it would be a lot less than if you were having it on its own with milk. I am so trying this, thank you, Ai! Hi Alli! Hi Moore! Yes, it definitely was because you halved the recipe.

If you only have half the ingredients in a regular sized sheet pan, you'll end up with too much empty space on the pan and it would cause the ingredients to burn.

Hope you try it again with the full recipe, or with a smaller baking sheet😊. My go to recipe! Your email address will not be published. Skip to primary navigation Skip to main content Skip to primary sidebar Recipes About Contact Search.

I just tweaked it by using less sweetener and adding dried fruit. Hi, I was wondering if you would be able to suggest a different item for the coconut flakes?

Hi Sandrea! You could substitute another type of seed like sesame seeds or hemp seeds. Or you could just leave it out altogether.

I have long ago stopped buying granola from the grocery stores. To me so much of it was to sweet, not nutty and wonderful like granola used to be. So I want to thank you so much for this recipe.

It is fabulous! Not only have I made this exactly but it started me on a journey to develop what I think of as a perfect old style granola. I did change the honey to pure maple syrup just to try it once but liked your recipe best with the honey.

I use a lemon zester that make shreds rather than fine grates as I love the hits of lemon when you eat it. I made this a month ago and it is so much better than the store brand. It was fun and I have so much since I usually only use for my yogurt to give it a crunch.

this recipe. Simple Coconut Chia Granola. Print Recipe. Pin Recipe. Author: Tera Prep Time: 5 Cook Time: 30 Total Time: 35 minutes Yield: 4 cups 1 x Category: Breakfast, snacks Method: Bake Cuisine: American.

Units US M Scale 1x 2x 3x. Cook Mode Prevent your screen from going dark. Preheat oven: Preheat your oven to degrees, and line a baking sheet with parchment paper or a silicone baking mat or use some nonstick cooking spray.

Combine dry ingredients: In a large bowl, whisk together the oats, flour, chia seeds, salt, and cinnamon. Mix wet ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract. Add granola to sheet pan: Spread the granola onto the prepared sheet pan in an even layer.

The layer will be pretty thick, so don't worry that oats are toppling all over each other -- this is how we get those delicious clusters!

Add the coconut flakes halfway through baking time by sprinkling them evenly over the granola and lightly stirring them in. Return the coconut granola to the sheet pan for the rest of the baking time. Let granola cool: After 30 minutes, when the coconut flakes are lightly toasted and browned, remove the granola from the oven and let it cool completely on the sheet pan before moving it.

Allowing it to cool on the sheet pan will help those large granola clusters bind together, and you can break them into smaller clusters if desired. Notes Parchment Paper: I cannot recommend enough using parchment paper for this recipe to avoid it sticking to the sheet pan!

Parchment paper helps the granola crisp up on the pan-facing layer and cool without become stuck, which helps so much for getting big granola clusters.

Storing: Store this granola in an airtight glass container. Either a jar with a tightly sealed lid or a glass leftovers container will work perfectly!
