Ingredients for 4 people: 3 lb. eggplants 1 28 oz. can crushed tomatoes 2 garlic cloves 1 8 oz. mozzarella, cut into small cubes 1 cup of freshly grated Parmigiano Reggiano basil leaves extra-virgin olive oil salt and pepper.
