At its best, fusion cooking takes a cherished template and presents it from several vantage points at once. Is it blasphemy? This recipe can be followed with either a large Dutch oven or an electric pressure cooker.

Over high heat, coat the bottom of a large pot with canola oil, until the oil sways and shimmers. Sear shanks in installments, allowing each side to form a brown crust, roughly 2 minutes per side. Lower heat or, if using an electric pressure cooker, turn it off as needed to prevent burning or excess smoke.

Once browned, place meat on a large plate. Bring heat back up to medium high. Add ginger, galangal if usingscallions, and garlic to the pot and constantly stir, coating each element with oil and the browned speckles at the bottom. Cook for 3 minutes, or until the aromatics begin to develop their own browned patina.

Add doubanjiang and tomato paste, stirring to saturate the mixture in a deep red. Cook for 1 to 2 minutes, until the pastes caramelize into a deep maroon. Deglaze the pot with soy sauce, dark soy sauce, Shaoxing wine, and sugar.

Scrape the bottom to free the browned bits. Allow it all to come to a boil, then add apple, onion, carrot, and celery and stir. Add star anise, Sichuan peppercorns, cinnamon stick, and fennel seeds to cuisibe pot. They can be placed in a sachet for cuidine extraction, but the braising liquid will be strained of the solids anyway.

Fill the pot with 6 quarts of water. Bring to a boil, then lower the heat to a simmer and cover. Allow to cook for 2 hours, or until the shanks are supple but not falling apart.

If using a pressure cooker, set on high pressure for 40 minutes, then allow for another 20 to 30 minutes of natural pressure release. Remove shanks onto a plate, and strain the braising liquid into a large pot or bowl.

Most of the aromatics will have essentially disintegrated into an indistinguishable mash, but the carrots will have held their shape. Reserve the carrots, discard the mash.

Reserve 2 cups of the braising liquid and set aside. Place half the shanks back into the braising liquid, and vuisine to cool, then refrigerate for tomorrow. Next begins the Sunday gravy.

In a dutch oven or a large pot over medium heat, add canned tomatoes, black vinegar, and reserved carrots. Crush the tomatoes and carrots with a wooden spoon. If the remaining beef shank is tender enough, shred the meat and add to the pot. If not, add the shank into the pot whole, and allow to cook until it is.

Add the 2 cups of braising liquid and bring back to a boil. Drop the heat to allow for a simmer, then cover, with the lid slightly ajar. The sauce will break down into a deep and uniform vermilion color. It should be deeply seasoned already, but add salt to taste. Boil spaghetti according to package instructions.

When al dente, add the spaghetti into cuosine sauce pot, tossing it constantly, until the loose starches of the pasta thicken the sauce. Serve immediately. If desired, garnish with grated parmesan or basil, or cilantro, scallion, and pickled mustard greens.

The next day, take the remaining fuisine broth out of the refrigerator. There will be red-orange rafts of fat floating on the top. Discard some if you must, but there is a lot of flavor there. Take the shank out and cut into either cubes or ½-in.

Bring the broth to a boil. Cook wheat noodles according to package instructions. To serve, add a tsp. black vinegar to the bottom of each serving bowl.
