O em gee. I also used baby spinach instead of kale because the only kale I had was frozen chopped and had some fresh spinach. Just as good! Thank you so much, a definite fave. This is incredible! Just made this, and it was delicious! Only differences — we used baby spinach instead of kale, and roughly scaled the recipe up 1. OMG… This was so delicious! I did not include the chickpeas…just not my thing. But I followed everything else to a T and then added some freshly grated ginger.

I made this soup in January for my carnivorous fiance who had the flu. I used homemade veggie stock instead of chicken stock. It was very quick and easy to make. Since discovering this soup, my fiance now makes it every week.

He makes it to eat for lunch throughout the week, using only half the chickpeas. It is his favorite soup! He has even started doubling the recipe, then splitting it before adding chicken to make a loaded veggie version for me vegetarian , adding sweet potatoes and cauliflower.

Its so good! I used mostley kale and a little bit of baby spinach i had leftover. I also used both chick peas and great white northern beans and a little extra celery, carrot, and bay leaf. Great recipe and easy to follow instructions. Love the tumerac. Will definitely make again.

thank you for this! I strained out juices towards broth for soup and shredded 3 cups of the meat for soup and set rest aside for other meals. Next, put pot on saute mode and followed recipe adding veggies and stirring in bits from bottom of pot for 4 mins and then the mushrooms and garlic for 3 mins.

When done I turned off heat, added rest of ingredients, put lid on in venting and then set to slow cook setting on instant pot for 4 hrs.

We really liked it, the kale added great texture. The only modifications I made was that I more than doubled the carrots and upon serving, added sliced jalapeños to each bowl for added depth and flavor.

Super flavorful, I love how much garlic is used. I had a can of black eyed peas in my pantry so I just used that and it was amazing. I think I will just continue to use whatever beans are in my pantry. You could also add rice to make it heartier if you would like and I think it would still be good.

Best soup EVER! I have made this 4 times now. amadeus some more tonight and used a few more mushrooms because i found myself digging for them last week lol. Thank you for sharing! Pressure cook on normal for 38 minutes. Let cool. Meat will fall right off bones. Put that in soup.

Hi there. I am watching my diet closely and am unsure of the accuracy of the nutrition information. Are you sure that the fat, sodium and carbs are close to accurate? Are you dividing by 8 servings? Awesome soup. I did use chx thighs and added 2cups water. I used 1 tsp turmeric. Extra carrot.
