Love this muffins! I changed the zucchini for celery an added flaxseed and chia seeds and they turned out delish!!! I do not have a mini muffin pan to make these. Because of the veggie puree, they definitely may need a longer cooking time though.

And ovens do cook a little different. My oven tends to take a little longer than what most recipes state. Try degrees, but you will probably have to bake them for 30 minutes.
