Prepare the sauce in the pan and then add cauliflower. Prepare the Panko crumbs in a sauté pan and set aside until just before serving. When ready to serve, pour cauliflower into a serving dish or right out of the pan and top with Panko crumbs.

Make-ahead instructions: Prepare cauliflower. Make sauce, adding extra liquid as stated in recipe for make-ahead, reserving crumbs until baking. Set in fridge up to 2 days ahead.

When ready to bake, remove from fridge and let sit on countertop for an hour. Bake as directed, but allow for an extra 15 minutes to ensure the casserole is heated through. Cauliflower may be purchased at Costco in 2-pound bags.

Yes you can but I would thaw it a bit and remove excess water. I think since frozen veggies are already blanched I would skip the steaming portion of the recipe. This recipe sounds really good but I am concerned the cauliflower would become mushy after it has been steamed then cooked in the oven for that long.

Why not used raw? The oven baking time is not long enough to soften the cauliflower but long enough to heat the rest of the ingredients and melt the cheese.

I suppose you could partially roast the cauliflower and then add the ingredients and finish baking. It really is up to you. We made this last night.

I steamed the cauliflower in my Ninja Foodi. Mixed the cheeses. Fried them in the Foodi and added smoked paprika. Then we added smoked paprika to the cheese. The next time we will use chopped onion and garlic. And, of course, my husband added chili pepper and hot sauce to his bowl!

I left the cream cheese out over an hour — but maybe it needed longer? When I put the cheeses, etc. together it seemed like it was the consistency of a cheese ball — and mixing it with the cauliflower was impossible. I even put it in the mixer and mixed hard — but it still would have smashed up the cauliflower.

Sorry you had so much trouble with the cream cheese. Perhaps it did need some more softening time. This WAS like a fully loaded baked potato! It honestly was just a wonderful blend between the two flavors. I would highly recomend. I just made this and, even though it tastes good, it came out watery. I steamed fresh cauliflower and used the cream cheese instead of the flour. Also freshly shredded cheddar cheese. The only thing I can think of is I used generic cheese and maybe should have used flour instead of cc.
